RALEIGH, N.C. (March 15, 2013) – NC State’s Rave! Catering program now offers five gluten-free sandwich options in its catered boxed lunch program. The new items were provided in response to a number of catering customers requesting the option.
Rave! Catering is affiliated with University Dining, which has offered gluten-free options in the various dining halls over the past few years, including a special toaster for gluten-free bread. Lisa Eberhart, dining’s dietitian, said she is glad to see the change take place in the catering program as well.
“We are always trying to provide the best experience for our customers,” Eberhart said. “This is a great step in that direction.”
The following sandwiches are now available:

Lone Wolf Turkey
Each sandwich comes with a gluten-free cookie, chips and soda. Orders can include a fruit salad, carrot raisin salad or a homemade (from scratch) potato salad, which are all gluten free. All sandwiches are served on gluten-free bagels.
Rave! Catering has also introduced a vegan version of the gluten-free boxed lunch. This includes a Mediterranean salad with chick peas and balsamic vinaigrette, along with chips and fruit as side options.
All staff will use special equipment when preparing the boxed lunches. Rave! Catering has ordered a special kit for the knives, cutting boards and other utensils. Staff have already been trained in preparation techniques.
