The ability for a farmer to create value-added products right on the farm, especially if using otherwise unsaleable product like off-spec fruit and vegetables, can increase farmer returns and cut down on food loss. As part of that effort a team of students worked with Dr. Mike Boyette in Agriculture and Biological Engineering to create a small-scale mobile produce dehydration unit. Bob Morrow at WolfExpress created a wonderful logo and name for the unit, “Farm Fresh/Field Dried.” The unit is complete and in use for trials on campus. It looks great and in a few weeks will be on the road for display at the Southeast Vegetable and Fruit Expo in Myrtle Beach, North Carolina.
