NC State Dining is reintroducing several fan-favorite dishes as two Talley Student Union restaurants return to their roots for the spring semester.

At 1887 Bistro, students will again find some of the concept’s most beloved comfort classics including the gourmet grilled cheese, hot honey chicken and the chicken avocado bacon sandwich.
“We are also bringing back some entrees, such as shrimp and grits, chicken and waffles and creamy sundried tomato tortellini,” said Anthony Brown, director of Talley foodservice operations. “Plus our classic flatbreads: four cheese, arugula margherita and bacon chicken ranch and some really nice salads.”
Los Lobos is also leaning back into its origins with a lineup focused on traditionally Latin burritos, bowls, quesadillas, tacos and salads.
“While our global menu was popular, we heard a lot from students that they missed more of the traditional offerings,” Brown continued. “So look for bases of beef barbacoa, chicken rojo, honey habanero chicken, ground beef, vegan chorizo and roasted vegetables. We’ll have some tasty rotating salsas and sauces and the guacamole and chips will be back, too.”

Lobos will still offer a featured global inspired bowl and additional specials like the Korean corn dog.
The new menus will be available when NC State Dining reopens for the spring semester on January 7, 2026.
