NC State Dining Offers Spring Nutrition Programs for Students

January 4, 2012 (Raleigh, NC) — NC State Dining will offer various nutrition programs beginning spring semester 2012 to currently enrolled students at NC State University. The programs have been coordinated by NC State Dining’s registered dietitian Lisa Eberhart, RD, CSSD, LDN, CDE.

Topics for the spring Nutrition Programs include: a “Fresh Start Basic Cooking Class” that will cover food safety and sanitation, basic knife skills and various cooking techniques; a “Fresh Start Specialty Cooking Class” that will focus on international flavors; “Nutrition 101” a program that is required prior to scheduling a weight loss or healthy eating appointment with the dietitian; “C-Store Nutrition 101” that highlights the healthiest options available in the convenience stores on campus; and “Dig in to the Dining Halls” a guided tour through Fountain Dining Hall that will show customers how to healthfully navigate the facility.

“We are very excited to offer these programs to students free of charge, with the exception of the specialty cooking class ” said Eberhart. “In fall 2011, we offered a version of the Fresh Start cooking classes and the student feedback was overwhelmingly positive. All of the spring programs were designed to give students the tools they need to develop a healthy approach to nutrition in a college setting.”

Spring 2012 Nutrition Program Schedule

Fresh Start Basic Cooking Class: Students are advised to take the free, basic cooking skills class before taking a specialty class. Classes will take place throughout the semester from 6:00 to 7:30 p.m. in the Honors Village Commons Kitchen. Class topics will change every month. Therefore, students are welcome to sign up for one class each month.

Fresh Start Specialty Cooking Class: Specialty cooking classes will focus on the following international flavors: Italian, Mediterranean, Mexican and Asian. To enroll in a specialty cooking class, students will pay a $5.00 fee that will cover food and cooking materials (fee is required for each class). NC State Dining advises that students take a basic cooking class before signing up for a specialty class. Classes will take place throughout the semester from 6:00 to 7:30 p.m. in the Honors Village Commons Kitchen.

Nutrition 101: Nutrition 101 is a required program before scheduling a weight loss or healthy eating appointment with the dietician. The program encompasses reading nutrition labels, portion sizes, allergy information and other topics related to nutrition. The class will be offered weekly from 4:00 to 5:00 p.m. at the Student Healthy Center in Room 1301.

C-Store Nutrition 101: Tours are free and will be offered on Thursdays throughout the semester from 1:00 to 1:30 p.m. at the Bragaw C-Store.

Dig in to the Dining Halls: Tours are free and will take place once a month on a Monday in Fountain Dining Hall from 5:15 to 5:45 p.m.
